Description
A rich and indulgent dessert that layers moist red velvet cake, creamy cheesecake, and a buttery pecan topping; perfect for any celebration.
Ingredients
Red Velvet Base:
1.5 cups all-purpose flour
1 cup granulated sugar
1 tablespoon unsweetened cocoa powder
1 teaspoon baking soda
1 large egg
1 cup buttermilk
0.5 cup vegetable oil
1 teaspoon vanilla extract
1 tablespoon red food coloring
Pinch of salt
Cheesecake Layer:
16 ounces cream cheese
0.75 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
0.25 cup sour cream
Butter Pecan Topping:
1 cup chopped pecans
0.25 cup brown sugar
2 tablespoons butter, melted
Pinch of cinnamon
Instructions
1. Preheat oven to 325°F. Grease a 9-inch springform pan and line bottom with parchment. Wrap base in foil for water bath protection.
2. Mix flour, sugar, cocoa, baking soda, and salt in one bowl. In another, whisk egg, buttermilk, oil, vanilla, and red coloring. Combine both and pour into pan. Bake for 20 minutes. Cool slightly.
3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream. Spread over red velvet base and smooth top.
4. Place pan in a larger roasting pan with hot water halfway up the sides. Bake for 50 minutes until center jiggles slightly. Turn off oven, crack the door, and let it rest for 1 hour.
5. Combine toasted pecans, brown sugar, melted butter, and cinnamon. Sprinkle over chilled cheesecake. Chill at least 4 hours before serving.
Notes
Use room-temperature ingredients for best blending.
Don’t skip the water bath, it prevents cracks and ensures a creamy texture.
Try variations like adding melted dark chocolate to the cheesecake layer or swapping pecans for walnuts.
Serve with whipped cream, fresh berries, or a cup of coffee.
Wrap and freeze (without topping) for up to 2 months. Add fresh topping after thawing.
Store leftovers in the fridge for up to 5 days.
