Description

A hearty layered casserole with seasoned ground beef on the bottom, creamy mashed potatoes on top, finished with melted cheese, crispy onions, and smoky honey barbecue sauce for a family favorite dinner.


Ingredients

1 pound lean ground beef

3/4 cup onion, finely chopped

1/3 cup seasoned dry breadcrumbs

1/4 cup smoky honey barbecue sauce

1 egg, lightly beaten

2 teaspoons chili powder

3/4 teaspoon salt

1 bag frozen diced russet potatoes made for steaming and mashing

2/3 cup evaporated milk

1 tablespoon butter

1 tablespoon fresh flat-leaf parsley, chopped

1 teaspoon garlic powder

1 cup cooked beef bacon pieces

1/4 cup crispy fried onions from a can

2/3 cup shredded Mexican-style cheese mix


Instructions

1. Prepping the Meatloaf: 

Preheat oven to 375°F and coat a 9×9 baking dish with cooking spray. Mix beef, onion, breadcrumbs, smoky honey barbecue sauce, egg, chili powder, and salt. Press into the baking dish. Bake uncovered for 20–25 minutes. Drain excess fat. Switch oven to broil and move rack 6–8 inches from heat.

2. Making the Creamiest Mashed Potatoes:

 Microwave the frozen diced russet potatoes according to package directions. Place in a bowl and mix with evaporated milk, butter, chopped parsley, and garlic powder. Mash until smooth or use a mixer for extra creaminess. Stir in cooked beef bacon pieces and crispy fried onions.

3. Assembling the Casserole:

 Spread the mashed potatoes evenly over the cooked beef layer. Top with shredded Mexican-style cheese mix.

4. Baking Until Golden and Bubbling:

Broil for 3–5 minutes until the cheese is lightly golden and bubbling.

5. Let It Rest and Dig In:

 Remove from oven, let it settle for a few minutes, then serve warm. Add extra smoky honey barbecue sauce on top if desired.

Notes

Use your favorite smoky barbecue sauce for added flavor.

Swap the cheese mix with cheddar or Monterey Jack for a sharper taste.
