Description

A simple, comforting casserole where chicken, vegetables, creamy soup, and rice cook together into a flavorful one-pan meal.


Ingredients

1.52 pounds chicken pieces

1 can cream of mushroom soup (10.75 oz)

1 cup long-grain white rice

1 medium onion, chopped

1 medium green bell pepper, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon black pepper

1 teaspoon thyme

Beef bacon (optional)

Small splash of vinegar (optional)


Instructions

1. Scatter the chopped onion and bell pepper across the bottom of your casserole dish to form a flavorful base.

2. Place the seasoned chicken pieces on top of the vegetables, arranging them in one layer for even cooking.

3. Pour the cream of mushroom soup over the chicken, spreading it so it coats most of the pieces.

4. Sprinkle the rice evenly over the soup so it absorbs the flavors as it cooks. Add beef bacon on top if using.

5. Bake according to your preferred temperature and time until the chicken is cooked through and the rice is tender.

Notes

You can swap the cream of mushroom soup with other cream-style soups.

A little vinegar adds brightness to the dish.

Use boneless or bone-in chicken based on your preference.
