Description
A sweet, spicy, and cheesy pizza topped with beef pepperoni, Fresno peppers, and a drizzle of homemade hot honey for the perfect finishing touch.
Ingredients
6 ounces honey
4–8 dried arbol chiles
1/8 teaspoon cayenne (optional)
6 ounces salt-free tomato sauce
1 clove garlic
1/2 teaspoon salt
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1–2 tablespoons hot honey
1 ball thin-crust pizza dough (200–250 g)
3 tablespoons pizza sauce
1 cup low-moisture whole-milk mozzarella
1 Fresno pepper, thinly sliced
1/4 cup beef pepperoni
1/8 cup goat cheese
Instructions
1. Heat the oven to 500°F with a baking steel inside and let it warm for 1 hour. Let the dough rest at room temperature for 60–90 minutes.
2. Crack the arbol chiles in half and warm them in a small pot for 60–90 seconds. Add honey and cayenne, heat until bubbles form, rest 10 minutes, then strain.
3. Blend the pizza sauce ingredients until smooth. Slice the Fresno pepper. Grate the mozzarella.
4. Dust a wooden peel with semolina and stretch the dough into a 10–16 inch round.
5. Spread the sauce, add mozzarella, beef pepperoni, Fresno slices, and goat cheese.
6. Slide the pizza onto the hot steel, bake for 2–3 minutes, rotate, bake 2–3 minutes more, then broil 1 minute.
7. Top with fresh basil and drizzle with hot honey before serving.
Notes
Hot honey keeps for up to 6 months in a sealed jar.
Freeze the mozzarella for 10–15 minutes if it is too soft to grate.
Use fewer chiles for mild heat or more for extra spice.
