Description

Simple, no-flour peanut butter cookies made with just four pantry ingredients.


Ingredients

1 cup peanut butter, smooth or crunchy

¾ cup granulated sugar (or preferred sweetener)

1 large egg

1 teaspoon vanilla extract, or ½ teaspoon baking soda


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, add the peanut butter, sugar, egg, and vanilla extract (or baking soda). Stir until the mixture is smooth and thick.
  3. Use a spoon or cookie scoop to form small dough balls. Place them on the baking sheet, spaced about two inches apart.
  4. Press a fork into each dough ball to create a crisscross pattern.
  5. Bake for 8 to 10 minutes, until the edges look set but the center is still soft.
  6. Let the cookies rest on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

The cookies will firm up as they cool, so don’t overbake — pull them while the centers still look soft.
