Description
Rich, fudgy brownies made with almond flour instead of all-purpose flour — naturally gluten-free with a nutty depth of flavor.
Ingredients
1 cup blanched almond flour, sifted
⅓ cup unsweetened cocoa powder
½ teaspoon baking powder
¼ teaspoon salt
2 large eggs, room temperature
½ cup melted unsalted butter or coconut oil
½ cup granulated sweetener (sugar, coconut sugar, or erythritol)
1 teaspoon pure vanilla extract
⅓ cup chocolate chips or chopped nuts, optional
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving a slight overhang for easy removal.
- In one bowl, whisk together the almond flour, cocoa powder, baking powder, and salt.
- In another bowl, whisk the eggs, melted butter (or coconut oil), sweetener, and vanilla extract until smooth.
- Slowly add the dry mixture into the wet mixture and stir gently with a spatula until fully combined. Avoid overmixing. Fold in chocolate chips or nuts, if using.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25 to 28 minutes, until a toothpick inserted in the center comes out with a few moist crumbs, not wet batter.
- Let the brownies cool in the pan for 10 to 15 minutes, then lift out using the parchment overhang and transfer to a wire rack to cool completely before slicing.
Notes
For a vegan version, replace the eggs with flax eggs (1 tablespoon ground flaxseed mixed with 3 tablespoons water per egg) and use dairy-free chocolate and coconut oil. For a lower-carb version, swap the sweetener for erythritol or monk fruit sweetener.
