Ingredients

1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 tablespoons sugar
1 large egg
1 cup milk (or almond milk for a dairy-free option)
2 tablespoons melted butter (or coconut oil)
1 cup fresh or frozen blueberries
Instructions
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar. This ensures an even, lump-free batter.
- In another bowl, beat the egg and mix it with the milk and melted butter. Slowly pour the wet mixture into the dry ingredients, stirring gently until combined.
- Fold the fresh or frozen blueberries into the batter, making sure they’re evenly spread.
- Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour ¼ cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Stack the pancakes on a plate and top with more blueberries, maple syrup, or a dollop of yogurt.
