Description

Ingredients

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

2 tablespoons sugar

1 large egg

1 cup milk (or almond milk for a dairy-free option)

2 tablespoons melted butter (or coconut oil)

1 cup fresh or frozen blueberries


Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar. This ensures an even, lump-free batter.
  2. In another bowl, beat the egg and mix it with the milk and melted butter. Slowly pour the wet mixture into the dry ingredients, stirring gently until combined.
  3. Fold the fresh or frozen blueberries into the batter, making sure they’re evenly spread.
  4. Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour ¼ cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  5. Stack the pancakes on a plate and top with more blueberries, maple syrup, or a dollop of yogurt.
