Chicken Broccoli Rice Casserole

Description

A creamy, cheesy one-pan casserole with tender chicken, rice, and broccoli, topped with a crispy cracker crust.


Ingredients

2 cups cooked chicken (shredded or diced)

1½ cups cooked white rice (or brown rice)

2 cups broccoli florets (fresh or frozen, thawed)

1 can cream of chicken soup

1 cup shredded cheddar cheese

½ cup sour cream or Greek yogurt

Salt, pepper, and garlic powder, to taste

1 cup crushed crackers or breadcrumbs, for topping


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the chicken and rice, if you haven’t already.
  3. In a large bowl, mix the chicken, rice, broccoli, soup, sour cream, and half the cheese. Season with salt and pepper to taste.
  4. Grease a baking dish, pour in the mixture, spread evenly, and top with the remaining cheese.
  5. Sprinkle crushed crackers or breadcrumbs on top for a crispy finish.
  6. Bake for 25–30 minutes, until the top is golden and the casserole is bubbly.

Notes

For a lighter version, use Greek yogurt instead of sour cream and low-fat cheddar. Make ahead and refrigerate for up to two days before baking, or freeze unbaked for up to three months.
