Description

Tender, spice-marinated chicken served over fragrant basmati rice with a creamy white sauce and a kick of hot sauce — inspired by the halal-cart chicken over rice tradition.


Ingredients

1 cup yogurt

2 tablespoons lemon juice, plus more to taste

1 teaspoon turmeric

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon ground coriander

Salt, to taste

4 to 6 boneless, skinless chicken thighs or breasts

2 tablespoons olive oil

2 cups basmati or long-grain rice

2 tablespoons butter

1 onion, minced

2 cloves garlic, minced

1 teaspoon turmeric

3 cups chicken broth

1 bay leaf

Yogurt-based white sauce (yogurt, mayonnaise, lemon juice, and garlic powder), for serving

Hot sauce, for serving

Chopped cilantro or parsley, for garnish


Instructions

  1. Marinate the chicken: in a large bowl, mix the yogurt, lemon juice, turmeric, cumin, paprika, coriander, and a pinch of salt. Add the chicken and coat evenly. Cover and refrigerate for at least 2 hours, or overnight for best flavor.
  2. Cook the chicken: heat the olive oil in a skillet over medium heat. Remove excess marinade and sear the chicken for 4–5 minutes per side until golden brown. Reduce heat to low, cover, and cook for another 5–7 minutes until the internal temperature reaches 165°F (74°C). Set aside and keep warm.
  3. Prepare the rice: rinse the rice under cold water until it runs clear. In a large pot, melt the butter and sauté the onion, garlic, and turmeric until fragrant. Add the rinsed rice and stir for 2 minutes to coat. Pour in the chicken broth, add the bay leaf, and bring to a boil. Cover and simmer on low for 15–20 minutes until the liquid is absorbed. Fluff with a fork.
  4. Assemble: spread a generous serving of rice on a plate, top with sliced chicken, drizzle with white sauce and hot sauce, and garnish with chopped cilantro or parsley.

Notes

For the best flavor, marinate the chicken overnight. Swap in brown rice or quinoa for a lighter version, or grilled vegetables and chickpeas for a vegetarian take.
