Description

Crispy homemade chickpea falafel served warm in a simple, tangy tomato sauce.


Ingredients

2 cups dried chickpeas, soaked overnight

1 cup fresh parsley, chopped

1 cup fresh cilantro, chopped

1 medium onion, diced

4 garlic cloves, minced

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon salt, or to taste

½ teaspoon black pepper

½ teaspoon baking powder

3 tablespoons all-purpose flour

Vegetable oil, for frying

2 tablespoons olive oil (for the sauce)

1 small onion, finely chopped (for the sauce)

3 garlic cloves, minced (for the sauce)

4 ripe tomatoes, chopped, or 1 can crushed tomatoes

1 tablespoon tomato paste

1 teaspoon paprika

½ teaspoon chili flakes, optional

1 teaspoon sugar

Salt and pepper, to taste (for the sauce)

Fresh basil or parsley, for garnish


Instructions

  1. Drain and rinse the soaked chickpeas.
  2. In a food processor, combine the chickpeas, parsley, cilantro, diced onion, minced garlic, cumin, coriander, salt, and pepper. Pulse until the mixture forms a coarse, well-combined paste — avoid over-blending into a smooth puree.
  3. Add the baking powder and flour, pulse briefly to combine, then cover and refrigerate the mixture for 30 minutes.
  4. Scoop the chilled mixture and shape into small balls or patties.
  5. Heat vegetable oil in a deep pan or pot. Fry the falafel in batches for 3 to 4 minutes per side, until deeply golden and crisp. Drain on paper towels.
  6. Meanwhile, heat the olive oil in a saucepan over medium heat. Add the chopped onion and garlic and cook until fragrant, about 3 minutes.
  7. Stir in the tomatoes and tomato paste, and simmer for 10 minutes, stirring occasionally.
  8. Season the sauce with paprika, chili flakes, sugar, salt, and pepper. Continue cooking for another 5 to 10 minutes, until thickened.
  9. Remove the sauce from heat and stir in fresh basil or parsley.
  10. Arrange the fried falafel in a serving dish and pour the warm sauce over the top. Garnish with extra herbs before serving.

Notes

This recipe makes two components — fry the falafel first, then build the sauce while they drain, so everything is ready to combine while it’s still hot.
