Description

A meatless pasta dish built around roasted vegetables, sautéed chickpeas, and nutritional yeast for a savory boost.


Ingredients

1 cup cooked chickpeas

2 cups cooked pasta

1 zucchini, chopped

1 red bell pepper, sliced

2 garlic cloves, minced

2 tablespoons olive oil

1 tablespoon nutritional yeast

Juice of half a lemon

Fresh basil, for garnish


Instructions

  1. Preheat the oven to 400°F (200°C). Roast the zucchini and red bell pepper with olive oil, garlic, and a pinch of salt for 15 minutes.
  2. Sauté the chickpeas in a pan with a little olive oil and garlic to enhance their flavor.
  3. Combine the cooked pasta with the roasted vegetables and sautéed chickpeas.
  4. Stir in the nutritional yeast and finish with a squeeze of fresh lemon juice.
  5. Garnish with fresh basil and serve warm.
