Description
A quick pressure-cooker method for tender, fall-apart lamb shoulder, seasoned with a garlic-rosemary marinade and simmered in a flavorful broth.
Ingredients
2 to 3 lbs lamb shoulder
½ cup olive oil
3 cloves garlic, minced
Juice of 1 lemon
2 tablespoons chopped rosemary
1 teaspoon smoked paprika
1 teaspoon salt
½ teaspoon black pepper
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
1 cup stock, wine, or water
Instructions
- Season the lamb shoulder with the marinade (olive oil, garlic, lemon juice, rosemary, smoked paprika, salt, and pepper). Chop the onion, carrots, and celery to use as a flavor base.
- Heat oil in the pressure cooker and sear the lamb shoulder on all sides to develop a rich crust.
- Pour in the stock, wine, or water. Add the chopped vegetables and any remaining herbs.
- Secure the lid and cook on high pressure for 35–45 minutes, depending on the size of the shoulder.
- Use the quick-release valve or let the pressure release naturally, then let the lamb rest for 10 minutes before slicing.
Notes
For deeper flavor, let the lamb marinate for up to 2 hours before searing. Works in either a stovetop pressure cooker or an electric instant pot.
