Description

A quick pressure-cooker method for tender, fall-apart lamb shoulder, seasoned with a garlic-rosemary marinade and simmered in a flavorful broth.


Ingredients

Scale

2 to 3 lbs lamb shoulder

½ cup olive oil

3 cloves garlic, minced

Juice of 1 lemon

2 tablespoons chopped rosemary

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 onion, chopped

2 carrots, chopped

2 celery stalks, chopped

1 cup stock, wine, or water


Instructions

  1. Season the lamb shoulder with the marinade (olive oil, garlic, lemon juice, rosemary, smoked paprika, salt, and pepper). Chop the onion, carrots, and celery to use as a flavor base.
  2. Heat oil in the pressure cooker and sear the lamb shoulder on all sides to develop a rich crust.
  3. Pour in the stock, wine, or water. Add the chopped vegetables and any remaining herbs.
  4. Secure the lid and cook on high pressure for 35–45 minutes, depending on the size of the shoulder.
  5. Use the quick-release valve or let the pressure release naturally, then let the lamb rest for 10 minutes before slicing.

Notes

For deeper flavor, let the lamb marinate for up to 2 hours before searing. Works in either a stovetop pressure cooker or an electric instant pot.
