Description

A moist, tender carrot cake made easy with frozen shredded carrots — no grating required.


Ingredients

2 cups thawed, well-drained frozen shredded carrots

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon cinnamon

1 cup brown sugar

¾ cup vegetable oil

4 large eggs

1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Whisk together the flour, baking powder, and cinnamon in one bowl.
  3. In another bowl, beat the sugar, oil, eggs, and vanilla until smooth.
  4. Fold the dry ingredients into the wet mixture, then fold in the shredded carrots.
  5. Pour into the pan and bake for 35 to 40 minutes, until a toothpick comes out clean.
