Description
A light, citrusy layer cake made with mandarin oranges and a fluffy pineapple-pudding frosting.

1 box yellow cake mix (15.25 oz)
1 can mandarin oranges (11 oz), with juice
4 large eggs
¾ cup vegetable oil
1 can crushed pineapple (20 oz), with juice
1 pack instant vanilla pudding mix (3.4 oz)
1 tub whipped topping (8 oz)
Instructions
- Preheat the oven to 350°F (175°C). Grease two round cake pans.
- In a large mixing bowl, combine the cake mix, mandarin oranges with their juice, eggs, and oil. Beat with a hand mixer for about 2 minutes until smooth.
- Divide the batter evenly between the two prepared cake pans.
- Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes sit in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
- While the cakes cool, make the frosting: in a mixing bowl, combine the crushed pineapple with its juice and the pudding mix, and stir. Gently fold in the whipped topping until light and fluffy. Cover and chill for 15 minutes.
- Place one cake layer on a plate and spread frosting evenly over the top. Add the second layer, then use the remaining frosting to cover the top and sides of the cake.
- Chill the assembled cake before slicing and serving.
Notes
Add mandarin slices or chopped nuts on top for decoration if you like.
