Description

Juicy oven-baked chicken thighs rubbed with fresh herbs, garlic, and lemon zest until the skin turns golden and crisp.


Ingredients

6 bone-in chicken thighs, skin on

3 tablespoons olive oil

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

4 garlic cloves, minced

Zest of 1 lemon

Salt and black pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels and season generously with salt and pepper.
  3. In a bowl, combine the olive oil, rosemary, thyme, garlic, and lemon zest. Rub this mixture all over the chicken thighs.
  4. Place the chicken on a baking sheet lined with parchment paper, skin side up.
  5. Bake for 35 to 40 minutes, until the skin is golden and crisp and the internal temperature reaches 165°F (75°C).
