Description
Soft, chewy bars made from rolled oats and naturally sweet mashed dates — no processed sugar required.
Ingredients
2 cups old-fashioned rolled oats
1½ cups pitted dates
2 tablespoons melted coconut oil (or softened butter)
2 tablespoons honey or maple syrup (optional)
1 teaspoon cinnamon
¼ teaspoon salt
½ cup chopped nuts or seeds (optional)
2–3 tablespoons warm water, for softening the dates
Instructions
- Preheat the oven to 350°F (175°C).
- Line an 8×8-inch baking dish with parchment paper so the bars lift out easily.
- If the dates feel tough, soak them in a small bowl with the warm water for about 5 minutes to soften.
- Blend the softened dates with the cinnamon and salt in a food processor until thick and spreadable, adding a bit more warm water if needed.
- In a separate bowl, stir together the rolled oats, melted coconut oil, and honey or maple syrup. Mix in the nuts or seeds if using.
- Press half of the oat mixture into the lined baking dish to form a sturdy base.
- Spoon the blended dates over the oat crust and spread evenly.
- Sprinkle the remaining oat mixture over the dates and pat down lightly.
- Bake for 20–25 minutes, until the top is golden brown.
- Let cool on the counter for at least 15 minutes before lifting out and slicing into bars.
Notes
Naturally vegan and easily made gluten-free — use coconut oil instead of butter and certified gluten-free oats. Add cinnamon, nuts, dried fruit, or dark chocolate chips to customize.
