Description

Soft, chewy bars made from rolled oats and naturally sweet mashed dates — no processed sugar required.


Ingredients

2 cups old-fashioned rolled oats

1½ cups pitted dates

2 tablespoons melted coconut oil (or softened butter)

2 tablespoons honey or maple syrup (optional)

1 teaspoon cinnamon

¼ teaspoon salt

½ cup chopped nuts or seeds (optional)

23 tablespoons warm water, for softening the dates


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line an 8×8-inch baking dish with parchment paper so the bars lift out easily.
  3. If the dates feel tough, soak them in a small bowl with the warm water for about 5 minutes to soften.
  4. Blend the softened dates with the cinnamon and salt in a food processor until thick and spreadable, adding a bit more warm water if needed.
  5. In a separate bowl, stir together the rolled oats, melted coconut oil, and honey or maple syrup. Mix in the nuts or seeds if using.
  6. Press half of the oat mixture into the lined baking dish to form a sturdy base.
  7. Spoon the blended dates over the oat crust and spread evenly.
  8. Sprinkle the remaining oat mixture over the dates and pat down lightly.
  9. Bake for 20–25 minutes, until the top is golden brown.
  10. Let cool on the counter for at least 15 minutes before lifting out and slicing into bars.

Notes

Naturally vegan and easily made gluten-free — use coconut oil instead of butter and certified gluten-free oats. Add cinnamon, nuts, dried fruit, or dark chocolate chips to customize.
