Description

Ingredients

1 cup all-purpose flour (for the pancakes)

2 tablespoons sugar

1 teaspoon baking powder

A pinch of salt

1 cup milk

1 large egg

2 tablespoons melted butter

2 large eggs (for frying)

1 teaspoon cooking oil or butter (for frying the eggs)


Instructions

  1. Whisk the flour, sugar, baking powder, and salt together in a bowl.
  2. Add the milk, egg, and melted butter, and stir until smooth and lump-free — a lump-free batter helps the pancakes turn out fluffy.
  3. Heat a skillet over medium heat and lightly grease it with butter. Pour ¼ cup of batter onto the skillet for each pancake.
  4. Cook until small bubbles form on the surface, then flip and cook the other side until golden brown. Repeat with the remaining batter.
  5. In a separate pan, heat a teaspoon of oil or butter over low heat. Carefully crack the eggs into the pan.
  6. Cook the eggs gently until the whites are firm but the yolks remain soft.
  7. Plate the pancakes and eggs together. Top the pancakes with fruit or a drizzle of syrup, if you like.
