Ingredients
1 cup all-purpose flour (for the pancakes)
2 tablespoons sugar
1 teaspoon baking powder
A pinch of salt
1 cup milk
1 large egg
2 tablespoons melted butter
2 large eggs (for frying)
1 teaspoon cooking oil or butter (for frying the eggs)
Instructions
- Whisk the flour, sugar, baking powder, and salt together in a bowl.
- Add the milk, egg, and melted butter, and stir until smooth and lump-free — a lump-free batter helps the pancakes turn out fluffy.
- Heat a skillet over medium heat and lightly grease it with butter. Pour ¼ cup of batter onto the skillet for each pancake.
- Cook until small bubbles form on the surface, then flip and cook the other side until golden brown. Repeat with the remaining batter.
- In a separate pan, heat a teaspoon of oil or butter over low heat. Carefully crack the eggs into the pan.
- Cook the eggs gently until the whites are firm but the yolks remain soft.
- Plate the pancakes and eggs together. Top the pancakes with fruit or a drizzle of syrup, if you like.
