6 bone-in, skin-on chicken thighs (about 2 to 2.5 pounds)

2 tablespoons smoked paprika

Hickory or applewood chips, soaked, for smoking


Instructions

  1. Clean the chicken thighs under cold running water and pat dry with paper towels. Trim off any excess skin, fat, or sinew.
  2. In a small bowl, combine the smoked paprika, garlic powder, onion powder, brown sugar, cayenne pepper, black pepper, and salt. Apply the rub generously over all sides of the chicken thighs.
