Description
Juicy, smoky chicken thighs seasoned with a simple dry rub and slow-smoked until tender with crisp skin.
Ingredients
6 bone-in, skin-on chicken thighs (about 2 to 2.5 pounds)
2 tablespoons smoked paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon brown sugar
1 teaspoon cayenne pepper, optional for heat
1 teaspoon black pepper
1 teaspoon salt
Hickory or applewood chips, soaked, for smoking
Instructions
- Clean the chicken thighs under cold running water and pat dry with paper towels. Trim off any excess skin, fat, or sinew.
- In a small bowl, combine the smoked paprika, garlic powder, onion powder, brown sugar, cayenne pepper, black pepper, and salt. Apply the rub generously over all sides of the chicken thighs.
- Preheat your smoker to 225°F to 250°F (107°C to 121°C). Add the soaked wood chips to the smoker box or directly onto the coals, and lightly oil the cooking grates.
- Arrange the chicken thighs on the smoker grates, skin side up, leaving space between the pieces for even airflow.
- Smoke for 1.5 to 2.5 hours, keeping the temperature steady between 225°F and 250°F. After the first hour, spritz the chicken every 30 to 45 minutes with apple juice, apple cider vinegar, or water to keep it moist.
- Check for doneness with a meat thermometer inserted into the thickest part of a thigh, avoiding the bone — it’s ready once it reaches 165°F (74°C).
- For crispier skin, increase the smoker temperature to 300°F (149°C) for the last 15 to 20 minutes, or finish the thighs on a hot grill for a quick sear.
- Remove the chicken from the smoker and let it rest for 10 minutes before serving.
Notes
This card uses the dry rub method. The post also includes a marinade option (olive oil, soy sauce, apple cider vinegar, honey, and garlic) — marinate the thighs for at least 2 hours, or overnight, instead of applying the rub, if you’d rather go that route. The chicken thigh count isn’t stated explicitly in the source post; 6 thighs (about 2 to 2.5 pounds) is a standard estimate sized to the rub quantities given.
