Description
Small, fluffy pancakes that come together quickly with pantry staples — perfect for topping with fruit, syrup, or nut butter.
Ingredients
1 cup all-purpose flour (or substitute whole wheat)
1 tablespoon sugar (or coconut sugar or honey)
1 teaspoon baking powder
¼ teaspoon baking soda
A pinch of salt
¾ cup milk (or almond, oat, or coconut milk)
1 large egg
2 tablespoons melted butter (or neutral oil)
1 teaspoon vanilla extract
Instructions
- Combine the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
- In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until fully combined.
- Slowly pour the wet ingredients into the dry mixture while stirring gently. Do not overmix — a few small lumps are fine and help keep the pancakes fluffy.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil. Let it heat for 1 to 2 minutes.
- Use a tablespoon or small ladle to scoop the batter onto the pan, forming pancakes about 2 to 3 inches in diameter, spaced apart.
- Cook for 1 to 2 minutes until bubbles form on the surface and the underside is golden brown, then flip.
- Cook the other side for another 1 to 2 minutes until golden. Repeat with the remaining batter, greasing the pan as needed.
- Stack the pancakes on a plate and keep warm. Serve with fresh fruit, maple syrup, or a dollop of nut butter.
Notes
Keep finished pancakes warm by covering with foil or holding in a 200°F (93°C) oven while you cook the rest.
