White Bean Sausage Soup

Description

A hearty, comforting soup with white beans, sliced sausage, and vegetables in a savory broth.


Ingredients

2 cups cooked white beans (cannellini or Great Northern), or 2 cans, drained and rinsed

2 sausages of your choice (chicken, turkey, or beef), sliced into thin rounds

2 tablespoons olive oil

1 medium onion, diced

2 garlic cloves, minced

2 carrots, peeled and chopped

2 celery stalks, diced

1 cup diced tomatoes, fresh or canned

4 cups vegetable or chicken broth

1 teaspoon dried thyme

1 bay leaf

Salt and freshly ground black pepper, to taste

Fresh parsley, for garnish


Instructions

  1. Rinse and drain the beans if using canned.
  2. Chop the vegetables into even-sized pieces for consistent cooking, and slice the sausage into bite-sized rounds.
  3. Heat the olive oil in a large soup pot over medium heat. Add the diced onions, garlic, celery, and carrots, and sauté for 5 to 7 minutes until the vegetables soften and the onions turn translucent.
  4. Push the sautéed vegetables to one side of the pot and add the sausage slices. Cook for 4 to 5 minutes, stirring occasionally, until the sausage is browned. Mix the sausage and vegetables together.
  5. Add the diced tomatoes and stir well. Pour in the broth and add the white beans, thyme, and bay leaf.
  6. Stir the mixture, bring it to a boil, then reduce the heat to low. Cover and let it simmer for 20 to 25 minutes.
  7. For a thicker soup, use an immersion blender to blend a portion of the beans directly in the pot. Taste and season with salt and pepper as needed.
  8. Remove and discard the bay leaf. Serve hot, garnished with freshly chopped parsley.

Notes

For extra flavor, add a splash of fresh lemon juice just before serving.
